  1. a cauldron or cooking pot used in Central Asian cuisine
    — A proper kazan also has to be well greased by constant use — it should never be washed with water, or, God forbid, actually scrubbed and scoured. The Uzbeks just wipe it carefully with an oiled cloth; and they will insist and I will second this — that the older the kazan, the better the pilaf.
